Recently I have been making my Mama's Chicken Tortilla Soup a lot. Everyone seems to be enjoying it as much as I do. It is so easy to make and just so yummy.
Mama’s Chicken Tortilla Soup
4 Chicken Breasts
2 cans of sweet corn
2 cans of black beans
2 cans of Mexican Stewed Tomatoes
1 can of enchilada sauce
1 can of tomato sauce
A bunch of cilantro
Half of a large onion
1 cup of Salsa
- Boil chicken in water until cooked through and shred the chicken.
- Add tomato sauce, sweet corn, salsa, and enchilada sauce together in a large pot.
- Drain and rinse the black bean before adding to the large pot.
- We prefer the stewed tomatoes to be chopped up, but they can be left whole and added to the large pot.
- Chop the cilantro and half of onion into small cubs and sauté them together, before adding them to the large pot.
- Add the chicken that has been shredded to the large pot.
- Heat the ingredients until hot on the stove.
- Top with sour cream, avocado, and or cheese. Enjoy.
