What's for Dinner???

Don't we all hate the dreaded question, "What's for dinner?" Whether it is coming from your husband, your kids, your best friend, or even yourself dinner can be the hardest question of the day. For dinner the other night I made this amazing sweet chicken. It was so easy and simple I wanted to share with everyone! The recipe for the chicken can be seen here





I've also been craving sweet potato fries! I am already a fry fanatic so sweet potatoes are amazing! I found this recipe online! I've heard that if you soak your potatoes for a couple hours you can get crispier fries. So I added that step into this recipe.

Mama's Chicken Tortilla Soup

Recently I have been making my Mama's Chicken Tortilla Soup a lot. Everyone seems to be enjoying it as much as I do. It is so easy to make and just so yummy.




Mama’s Chicken Tortilla Soup

4 Chicken Breasts
2 cans of  sweet corn
2 cans of black beans
2 cans of Mexican Stewed Tomatoes
1 can of enchilada sauce
1 can of tomato sauce
A bunch of cilantro
Half of a large onion
1 cup of Salsa
  • Boil chicken in water until cooked through and shred the chicken.
  • Add tomato sauce, sweet corn, salsa, and enchilada sauce together in a large pot. 
  • Drain and rinse the black bean before adding to the large pot.
  • We prefer the stewed tomatoes to be chopped up, but they can be left whole and added to the large pot.
  • Chop the cilantro and half of onion into small cubs and sauté them together, before adding them to the large pot.
  • Add the chicken that has been shredded to the large pot.
  • Heat the ingredients until hot on the stove.
  • Top with sour cream, avocado, and or cheese. Enjoy.
